- The first press of the Palomino grapes used here has slightly more structure and body, and ages in the Oloroso Solera system where the oxygen adds richness and complexity; after four years ageing, it is blended with 25% sweet Pedro Ximenez and together they spend another 4 years in the Solera 1847 solera, so named in honour of the date the founder’s first son was born
